This is super easy to make, ready in about 15 minutes, all the family loves it and it is low calorie too. When I saw that BritMums were calling for egg recipes for their ‘Main Meals Linky Challege’, I had to share this one!

Here are the ingredients (recipe serves 4):

  • 400g plain dried spaghetti
  • 4 medium eggs, lightly beaten
  • Fry Light
  • 100g back bacon- remove all visible fat and cut into 2cm pieces
  • 4 garlic cloves, finely chopped
  • 120g parmesan cheese, finely grated
  • Salt & freshly ground black pepper
  • Handful of flat leaf parsley to serve- finely chopped

Method:

  • Cook spaghetti according to the packet instructions.
  • Meanwhile, spray a large frying pan with Fry Light over a medium high heat. All the bacon and stir fry for 2-3 mins
  • Add the garlic and stir fry for 30 seconds, then set aside
  • Drain the spaghetti and add to the bacon mixture in the pan
  • Add the eggs, and half the parmesan, season and toss
  • (The heat from the spaghetti will partly cook the egg, but still leave it moist. Note: if you are pregnant, don’t eat raw or partially cooked eggs)
  • Divide the spaghetti carbonara between 4 bowls, garnish with flat leaf parsley, sprinkle with parmesan and serve

On Slimming World, this recipe is SYN FREE on the Extra Easy plan. Add 6 syns if you are not using the parmesan as a Healthy Extra.

So far on my weight loss journey, I’ve shifted 4 stones, and it is meals like this that have really helped! It is so quick to do- mega easy (it has to be when you are hungry!) and my daughter loves it. She is always asking “Mum, when are we having spaghetti carbonara’?!” For a family evening meal I serve it with garlic bread slices but today I’m having it for lunch, so I’ll just have a smaller serving on its own. Here is what I’m enjoying today! (The glass contains lemonade BTW! I can’t have wine at lunch!!)

    Ooh! Single cream sounds fab but I have to stick with my slimming eggy version! My hips won’t forgive me otherwise!!!
