I find it hard to come up with new dinner ideas all the time.
I regularly delve into my Slimming World magazines for ideas and pick my friend’s brains for inspiration, but I love it when someone says to me… “Why don’t you try this for dinner?” because it is one less decision I have to make and I think “Yeah- why not?!”
I haven’t always been a competent home cook. These days I can whisk and sautee with the best of them but it wasn’t always this way. So I do like simplicity in the kitchen- food that is quick and easy to make and that will fill up hubby. So I was keen to try out the new Schwartz 2in1 sachet that I was sent.
Schwartz have just launched a new 2in1 seasoning range where you get a packet that will flavour a main dish and a side such as the Garlic & Thyme Roasted Chicken and Crispy Roast Potatoes. The packet I used was for the Mediterranean Chicken Pasta and Cheesy Crumb Topping. It contains a blend of herbs and spices for chicken pasta with a cheesy crumb topping. Here are the ingredients ‘before’!
You need the sachet of Schwartz 2in1 mix; 1 tbs oil; 450g boneless chicken breasts; 1 yellow pepper; 150ml water; 400g tin chopped tomatoes; 200g pasta; 75g Cheddar cheese.
So to make the pasta dish I had, it is just 5 steps.
1. Pre heat the grill to a medium high heat
2. Heat oil and fry chicken for 6-7 minutes until browned. Add yellow pepper and cook for a further 2 minutes
3. Mix Mediterranean Chicken Pasta Recipe Mix with water and add to the pan with the tomatoes. Bring to a simmer then stir in the pasta and heat for 1-2 minutes
4. Transfer to a baking dish and sprinkle with the Garlic & Herb Crumb Topping, then the cheese
5. Place under the grill for 4-5 minutes until golden
Here is how it turned out:
The meal was very filling and tasted nice but I did find the cheesy crumb topping a little ‘powdery’. I don’t use packet mixes often so this could be typical of packet mixes, I’m not sure. But in any case we ate the lot and it made a nice change for a mealtime. I plan to try the chicken and roast potato 2in1 mix at some stage, as other reviews I’ve seen on the “What’s for Dinner Tonight?” linky look really nice using this packet.
